Ful Medames – Post workout Superfood

 


Best known as Egypt’s national dish, ful medames is a hearty stew of warmed fava beans stirred with olive oil, lemon juice, and garlic, usually eaten for breakfast. But ful, as it’s known casually, is a staple all over the Middle East. Canned fava beans are pre-cooked and provide much faster results, be sure to to rinse the  canned beans well to remove any preservatives. I like to use Al-wadi fava beans. If you have the time, best results are achieved by using dried fava beans and soaking them overnight.

Ingredients

1 (16-oz.) 450g can fava beans, drained and rinsed

diced red onion

finely chopped parsley

1⁄2 tomato diced

1⁄2 lemon for juice

1 tsp. olive oil

2 tsp. chilli flakes or chilli paste (optional)

1 clove garlic, crushed and boiled with beans then removed

Salt and freshly ground black pepper

2 soft-boiled eggs
